Healthy Breakfast Bars www.littlehouseliving.com/This recipe can also be used for muffins or baked in a loaf pan. You will need to adjust the baking time accordingly- it should take about the same time for muffins, but a loaf will take anywhere from 20-30 minutes longer. What You Need:
2 cups whole wheat flour 2 teaspoons baking powder ½ teaspoon kosher salt 1 teaspoon ground cinnamon ¼ teaspoon ground nutmeg ¼ teaspoon ground ginger ½ cup coconut oil or unsalted butter, room temperature ½ cup honey 2 eggs ¼ cup ground flaxseed 1 cup pumpkin puree Zest of 1 lemon ½ cup raisins
Method
Preheat the oven to 375 degrees. Grease a 9x13 pan. In a large bowl, combine the flour, baking powder, salt, and spices. In the bowl of your stand mixer, whip the coconut oil or butter until light and smooth. Add the honey and beat until incorporated. Add the eggs one at a time, mixing well after each addition. Add the flaxseed, pumpkin puree, and zest. Mix well. Slowly add the flour mixture. Increase speed to medium for a scant minute. Fold in the raisins. Spread the batter in your prepared pan and bake for 25 minutes. Let cool in the pan and then cut into desired size.
