Skillet LasagnaBy Steph @ www.plainchicken.com/This was fabulous! Cheesy and delicious! I love lasagna, but it isn't really an option for a weeknight. This quick pasta dish has all the flavors of lasagna and only takes minutes to prepare. If you don't like ricotta, you can use cottage cheese. If you don't like ricotta or cottage cheese, try some sour cream or Greek yogurt. Serve this with a side salad and some garlic bread for a quick Italian feast! I had the leftovers for lunch the next day and it was great (almost better). Ingredients: 8 oz bowtie pasta 1/2 lb sausage 1/2 lb lean ground beef 1 tsp minced garlic 1 tsp dried basil 1 (24oz) jar spaghetti sauce 1 cup shredded mozzarella cheese 2/3 cup ricotta cheese
Instructions: Cook noodles according to package directions. Drain. Set aside. In a large skillet, brown sausage and ground beef. Drain fat and return meat to skillet. Add mined garlic and cook until fragrant, about 30 seconds. Add spaghetti sauce, basil, mozzarella cheese and ricotta to the meat. Stir to combine. Add noodles and stir to coat thoroughly. Simmer about 10 minutes, stirring occasionally. Top with additional cheese if desired.
