Mud Hen BarsBy Stephanie Parker @ www.plainchicken.com/Oh my heavens! These bars are incredible. I could not stop eating them, and I am not a dessert person. The bars have chocolate and marshmallows sandwiched between a cookie and crunchy brown sugar meringue layer. I've had this recipe bookmarked in my Google Reader for years. I can't believe I waited so long to make them. I have no idea what a "mud hen" is, but their bars taste really great. I shared these with a friend, and she gave them two thumbs up! They are super quick to put together Ingredients: 1/2 cup butter, room temperature 1 cup white sugar 3 eggs, divided (1 whole, 2 separated) 1 1/2 cups flour 1 tsp baking powder 1/4 tsp salt 1 tsp vanilla 1/2 cup semi-sweet chocolate chips 1 cup mini marshmallows 1 cup brown sugar
Instructions: Preheat oven to 350 degrees.
Beat together the white sugar and butter until creamy. Beat in 1 whole egg and 2 egg yolks (put whites aside for later). Mix in the flour, baking powder, salt and vanilla. Spread into a lightly greased 9 x 13-inch pan.
Sprinkle marshmallows and chocolate chips on top of unbaked cookie crust.
Beat egg whites until stiff peaks form. Fold in the brown sugar. Spread the meringue mixture over the marshmallows and chocolate chips.
Bake for 30 minutes.
Cool in pan and cut into squares.
