Beef Stroganoff Portion - 3 oz meat Serves: 2Ingredients 6 oz beef top round, sliced into flat, 1 inch squares ½ small yellow onion, sliced into thin wedges 2 tbls all-purpose flour 1 tbl olive oil 1 tbl butter 1 tbl of reduced-fat sour cream 3/4 cup of beef broth ½ cup of sliced mushrooms salt to taste ground black pepper to taste garlic powder to taste
Directions
Preheat 6” stainless skillet over medium heat. Add olive oil and let heat until slightly sizzling. Season meat, then coat with flour on all sides. Brown meat in oil on both sides. Remove meat from skillet. Add butter to skillet. Add onions and mushrooms and lower heat. Saute onions and mushrooms until tender and slightly browned.
Add meat and broth to skillet. Lower heat to very low and cover. Simmer for 20 minutes or so, until meat is tender. Remove from heat and stir in sour cream. Serving Suggestions Serve with 1 cup of wide egg noodles or 1 cup of rice. Add in additional calories.
