Homemade Pancake Mixwww.somethingswanky.com/1 cup mix = 6 pancakes. Ingredients 4 cups all-purpose flour (or a combination of whole wheat and all purpose, I did half and half) 3 tablespoons baking powder 2 teaspoons baking soda 1 teaspoon salt 2 tablespoons plus 2 teaspoons sugar 4 tbsp butter, cold
Instructions 1.Whisk together all of the dry ingredients. 2.Cut in the butter with a fork (butter will need to be a little soft to use a fork) or pastry cutter until the mixture is crumbly. Try to get the butter into as small of pieces as possible so that it will be evenly distributed among the mix.
3.To make pancakes: mix one cup of milk, 1 egg, and 1 cup of the mix together until a smooth batter forms. Cook on a griddle or skillet like normal (I recommend microwaving the mix in the bowl for 30 seconds before mixing in the milk and egg- this will soften the butter if you are storing it in the refrigerator).
