Cucumber SaladBy: Heather @ shrinkingkitchen.com/Prep Time: 10 hours Total Time: 10 hours Yield: 2 servings Serving Size: 1/2 of mixture Gather 1 english cucumber or 4 persian cucumbers 1/4 cup rice vinegar 1 teaspoon sugar 1 teaspoon sesame oil pinch red pepper flake 1/8 teaspoon sea salt 1 teaspoon toasted sesame seeds
Step by step In a small bowl, combine vinegar, sugar, oil and pepper flakes with a whisk. Using a vegetable peeler, create long strips of cucumber. Throw the cucumber strips into the dressing and toss to coat. Allow to marinate for a few minutes.
