Pat's Banana Muffins

Minutes to Cook: 20
Number of Servings: 12
Ingredients
1 cup oatmeal
1 cup skim milk
3 mashed bananas
2 egg whites
3/4 cup wheat flour
1/2 cup splenda brown or regular sugar substitute.
[*Loupy's note: As you all know I never use artificial sweetners, so I used Stevia here. You really don't need any brown sugar for this.]
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Directions
Combine the 1 cup old fashioned oatmeal and the 1 cup skim milk.
Mix together and soak for 1 hour.
Then add 3/4 cup mashed bananas and 2 egg whites, slightly beaten to the mixture.
Mix these dry ingredients together then add to oatmeal mixture:
3/4 cup sifted wheat flour
1/2 cup Splenda brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Mix batter then fill muffin cups.
Bake at 400 degrees for 20 to 25 minutes.
You can add walnuts to the tops of muffins (these calories are not calculated in recipe)
Variation: This is LYTHAN's variation and it came out great!
1 egg, slightly beaten
1/4 cup white flour, 1/2 wheat flour (3/4 cup)
2 Tablespoons brown sugar
1 tsp cinnamon
2 ounces chopped pecans
2 ounces mini unsweetened chocolate chips
Bake at 400 degrees for 25 min
