Whole Cranberry Chutney www.lhj.com/ Prep 10 mins Start to Finish 25 mins Yield: 4 cups Ingredients 1 1/2 tablespoons olive oil 4 shallots, finely chopped 1 1/2 tablespoons mustard seeds 3/4 teaspoon hot pepper flakes 2 12 ounce bags fresh or frozen cranberries 1 1/3 cups sugar 1 cup golden raisins 1/2 cup apple cider vinegar 2 teaspoons finely grated fresh ginger
Directions Heat oil in a 3-quart heavy saucepan over moderate heat. Add shallots, mustard seeds, and pepper flakes; cook, stirring occasionally, until shallots are softened, about 5 minutes. Stir in remaining ingredients and simmer, stirring occasionally, until berries just begin to pop, about 7 minutes. Let stand until cool, then transfer to a serving bowl, and cover and keep chilled until ready to serve.
