Easy Cheesy Chicken and Wild Rice By: Loupy
Serves about 4
Ingredients: 1 box (6.0 oz) Uncle Bens Country Inn Chicken & wild rice 2 cups Low sodium chicken broth about 8 oz of Kirkland canned chicken breast drained (It comes in a 12.5 oz can. You can use all of it if you wish. That would up the protein in this dish.) 1/2 cup shredded cheddar cheese
Directions Empty the box of wild rice and flavor packet into a medium sauce pan Add 2 cups low sodium chicken broth instead of water. Stir well. Cut the chicken pieces into smaller pieces and add them to the rice. Bring the rice and chicken to a boil. Reduce heat and simmer covered for 10 minutes. Remove from heat. Set aside and stir in the cheese. When all liquid is absorbed, fluff with a fork and serve immediately.
