W. W. Slow Cooker Barbecue Chipotle BeefFrom: www.slenderkitchen.com Until this summer, my slow cooker was something reserved for winter when I wanted something warm and hearty. However, something about this summer has me breaking out the crockpot almost every week. Who know it could create such great summer recipes? This recipe is incredibly simple and combines smoky chipotle with barbecue sauce. The beef comes out flavorful and fork tender – perfect for any summer barbecue or piled into a sandwich. This would also work with chicken. Servings: 12Serving Size: 4 oz Ingredients 3 lbs beef eye round or bottom round roast, all fat trimmed 1 bottle barbecue sauce (2 cups) 1/2 cup blended chipotles (I use Clemente Jacques Chipotle Molidos but if you can’t find that you can just blend canned chipotles)
Instructions Stir the barbecue sauce and chipotle together to create the sauce. Sprinkle the beef with salt and pepper and add to the crockpot. Pour the sauce over the beef. Cook for 6 hours. Shred with a fork and cook an additional 10-20 minutes to let the sauce thicken up.
