Pork Stew From: www.stewrecipes.net/ Ingredients: 1 Tablespoon Extra Virgin Olive Oil 3/4 Pound Boneless Pork Shoulder, cut in chunks 3 Cups Yellow Onions, coarsely chopped 2 Tablespoons Garlic, minced 4 Cups Chicken Broth 2 Ancho Chiles, stems and seeds removed, rinsed 1 Teaspoon Dried Oregano 1 Can White Hominy, (15 oz) drained Preparation: 1. Heat the oil in a saucepan. 2. Add the pork and brown on all sides. 3. Add the onion and garlic and cook until lightly browned. 4. Add the broth, chiles and oregano. 5. Bring to a simmer, cover and cook 1 hour or until the pork is tender. 6. Add the hominy and simmer uncovered for 10 minutes. 7. Skim off and discard any skins from the chiles. 8. Ladle the stew into soup bowls and serve with shredded lettuce, chopped plum tomatoes, slivered onion and lime wedges.
