Easter Breakfast CasseroleBy: Stephanie@ allrecipes.com "This is looked forward to every Easter, it is so delicious!"Prep Time: 25 Min Cook Time: 1 Hr Ready In:1 Hr 25 Min Serves: 12Ingredients 1 pound bacon 1/4 cup diced onion 1/4 cup diced green bell pepper 3 cups shredded Cheddar cheese 8 eggs 2 cups milk 1 (16 ounce) package frozen hash brown potatoes, thawed butter
Directions Preheat oven to 450 degrees F Lightly grease a 7x11 inch casserole dish. Layer the hashbrowns on the bottom of your pan, dot them with butter. Bake them first until they start to brown, then take them out of the oven. In the meantime...Fry the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain on a paper towel-lined plate and crumble. In a large bowl beat together eggs and milk. Mix in cheese, bacon, onion and green pepper. Pour mixture into prepared casserole. Turn oven down to 350 degrees F. (175 degrees C). Cover casserole with aluminum foil and bake in preheated oven for about 35 minutes. (Cook until a toothpick comes out clean when inserted in the middle of the casserole.)
