McCalls Barbecue Spareribs & Sauce
done in the oven
Serves 6
Ingredients: 4 lb spareribs, cracked in half lengthwise 1 onion peeled & quartered 2 teaspoons salt 1/4 teaspoon pepper
Place all above in a large kettle, with 3 quarts water. Bring to a boil, reduce heat, simmer covered for 1 1/2 hoursuntil very tender, drain.
SAUCE: 1/2 cup cider vinegar 1/ cup light brown sugar, packed 1/2 cup catchup 1/4 cup chili sauce 1/4 cup Worcestershire sauce 2 Tablespoons chopped onion 1 Tablespoons lemon juice 1/2 teaspoon dry mustard 1 clove garlic, crushed dash of cayenne pepper
Directions:
Combine all sauce ingredients in a medium pan, simmer uncovered, 1 hour, stirring occasionallly. Arrnage ribs on rack in broiler pan, brush with sauce, broil 5 inches from heat, baste often with sauce, 10 minutes on each side.
