Ham, Sweet Potato and Apple Casserole From: www.easytobeglutenfree.com/Ingredients: 2 medium sweet potatoes, peeled and cut into bite sized cubes 2 medium apples (I used Granny Smith), cored and sliced (not peeled) 1 lb cooked ham, cut into bite sized cubes 1 medium onion, rough chopped ½ cup dried cranberries ½ cup apple cider or juice 2 tablespoons cornstarch 3 tablespoons butter, melted 2 tablespoons brown sugar 2 tablespoons maple syrup 1 tablespoon lemon juice ½ teaspoon cinnamon ½ teaspoon allspice
Instructions: Preheat oven to 375°F. In a medium saucepan combine sweet potatoes and enough water to cover. Cook over medium heat until just tender. Drain well and transfer to a 3 quart casserole dish. Add apples, ham, onion and cranberries to dish. Stir to combine. In a small bowl combine apple cider or juice and cornstarch. Stir until cornstarch is dissolved and mixture is smooth. Add remaining ingredients and stir to combine. Pour mixture evenly over casserole. Cover and bake for 1 hour.
