Dreamy, Dairy Free, Skinny Mashed Potatoes
with Weight Watchers Points
Mashed potatoes really don’t need to be made with milk or cream to be rich and creamy. I’m using reduced-sodium chicken broth instead! Their delicious flavor is also coming from cooked onions and a little Smart Balance Light. The skinny for one serving is 148 calories, 1.9 grams of fat and 4 Weight Watchers POINTS PLUS. Made with butter and milk each serving has 269 calories and 10 grams of fat.
Makes 6 (½ cup) servings
Prep Time: 8 minutes
Cook Time: 25 minutes
Ingredients
1½ pounds Baby Dutch Yellow Potatoes, Yukon gold or red potatoes, scrubbed and cut into even sized chunks, see shopping tip
¾ cup reduced-sodium chicken broth
2 cups onions, chopped
Salt and pepper, to taste
2 tablespoon Smart Balance Light, see healthy benefits
Instructions
1. Add potatoes to a pot and cover with water.
Bring to a boil, cover and simmer for about 15-20 minutes until tender.
2. In the meantime, place onions on a microwave safe plate and cook in the microwave for about 4 minutes, until soft.
3. Add cooked onions and chicken broth to a blender and blend until smooth.
4. Drain potatoes into a colander and place drained potatoes back in the pot.
Add the Smart Balance, pureed onions and broth and a little salt and pepper.
Turn flame to medium and smash using a potato masher or the back of a fork.
Mash potatoes until smooth and all the ingredients are heated.
