Prep Time: 10 Min Cook Time: 30 Min Ready In: 40 Min Original Recipe Yields: 24 hush puppies Ingredients 2 eggs, beaten 1/4 cup white sugar (or less if you like them less sweet) 1 tsp garlic powder 1 tsp onion powder 1 tsp chili or cayenne powder 1 cup self-rising flour 1 cup self-rising cornmeal 1 quart oil for frying 1/4 cup milk or buttermilk (optional) salt and pepper to taste
Directions In a medium bowl, mix together eggs, sugar, garlic, cayenne and onion powders, salt and pepper. Blend in flour and cornmeal. Let the batter sit for 10 minutes before frying. If batter seems too dry, add a little of the ilk/mbuttermilk. Heat 2 inches of oil to 365 degrees F (185 degrees C). Drop batter by rounded teaspoonfuls in hot oil, and fry until golden brown. Cook in small batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.
