Cream Cheese Peach Pie By Anne; "It's a Baltimore Life" blog
This refrigerator pie is so easy to make and only requires 5-10 mins of baking for the crust so perfect for the hot summer days. Enjoy!
Ingredients: 1 cup graham cracker crumbs 1/3 cup melted butter 1/4 cup sugar 1 8 oz cream cheese, softened (recommend Philly brand cream cheese to get a smooth, creamy consistency) 1 can sweetened condensed milk 1/3 cup fresh squeezed lemon juice 1 tsp vanilla 6-7 ripe peaches, skinned and thinly sliced
Instructions: 1. Preheat oven to 350 degrees. Mix first three ingredients in pie dish and press to the bottom and sides. With a fork, prick bottom and sides of unbaked pastry in pan at about 1-inch intervals Bake for 5-10 minutes and let cool. 2. Cream together cream cheese, lemon juice and vanilla until smooth. Add sweetened condensed milk and blend until smooth. Places peaches in cooled crust and pour creamy mixture over the top. 3. Refrigerate until cool before serving.
