Banana Oatmeal Chocolate-Chip Cookies[/size]
Thanks to the potassium- and fiber-rich banana, plain old chocolate chip cookies get a healthy makeover.
Makes 8 cookies
Ingredients: ¼ cup of vegetable oil 1 cup raw organic sugar 2 teaspoons vanilla 2 ¼ cup oat flour 1 teaspoon baking soda ½ teaspoon salt 1 cup dark chocolate chips ¾ cup mashed overripe banana (≈1 large banana)
Directions: Preheat oven to 350°.
Combine all ingredients in a medium sized bowl. On a non-stick cookie sheet (or line a cookie sheet with parchment paper), scoop batter with a medium-sized ice cream scoop. Space cookies evenly.
Cook 35 minutes, rotating halfway through. The cookies should have a slightly brown edge and come out clean when poked with a toothpick.
