Joann's Famous Cookies Recipe Submitted by joannw88
Makes 25 servings
These are amazingly healthy - for even healthier diabetic friendlier cookies you can use Agave instead of the sugars listed. Agave packs 20 calories per teaspoon, five more than granulated sugar, but, like honey, it’s sweeter than sugar, so you need less to achieve the same level of sweetness. A general substitution is to use one-third less agave nectar than you would white sugar and reduce other liquids by one-fourth. (This may require experimentation when making some recipes, such as baked goods.)[/size]
Ingredients:
1 cup flax, meal 1/3 cup brown sugar, firmly packed 1/2 cup Granulated sugar 1/3 cup egg whites, or 2 eggs 1/3 cup soy milk 1 tsp vanilla extract 1 cup whole wheat flour 1 tsp baking soda 1 tsp ground cinnamon 1 pinch of salt 3 cup Oats, uncooked 1/2 cup raisins 1/2 cup chocolate chips (milk chocolate if you want it extra sweet)
Directions: Heat oven to 350 F Mix sugars and flax. Add eggs, soy milk and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats, chocolate chips and raisins; mix well.
Drop by rounded tablespoonfuls (or large teaspoonfuls if you want smaller cookies) onto un-greased cookie sheet (I like lining the cookie sheet with aluminum foil).
Bake 10 to 12 minutes or until light golden brown.
Cool 1 minute on cookie sheet
Remove to wire rack. Cool completely.
Yields about 2 to 4 dozen cookies depending on how big/small you make them.
