Salt Free Raisin Batter Bread
Makes 18 (1/2") slices
Ingredients: 2 1/2 c. flour 1 c. whole wheat flour 1/2 c. raisins 1 tbsp. sugar 1/2 tsp. grated orange rind 1 pkg. dry yeast 1 c. warm water (105 to 115 F.) 1/4 c. vegetable oil 1 1/2 tbsp. unsweetened orange juice 1 egg, beaten Vegetable cooking spray
Directions: Combine flour, raisins, sugar & orange rind. Dissolve yeast to warm water in a med. bowl. Stir in oil, orange juice & egg. Pour into flour mixture, blending well. Place dough in a 9x5x3" loafpan coated w/cooking spray. Cover & let rise in a warm place (85 F.), free from drafts, 1 hr. or until doubled in bulk. Bake at 350 F. for 40 mins. or until golden brown.
