Mississippi Mud Cake Recipe
Ingredients:
• 2 cups sugar
• 1 cup shortening (margarine or butter also work fine)
• 4 eggs
• 3 teaspoons vanilla flavoring
• 1 ½ cup flour (self-rising)
• 1/3 cup baking cocoa
• ¼ teaspoon salt
• ½ cup chopped pecans (can use other nuts if preferred)
• 5 cups miniature marshmallows
Directions:
1. Cream together the sugar and shortening.
2. Add eggs one at a time and mix in well.
3. Add vanilla flavoring and mix until smooth.
4. Sift together flour, cocoa, and salt and then add to the butter mixture a little at a time and mix until smooth.
5. Stir in nuts.
6. Spread mixture evenly into a greased 9 x 13 or similar sized baking dish.
7. Bake at 350 degrees F (preheated) for around 35 minutes or until a toothpick comes out clean.
8. Remove cake from oven and put marshmallows on top. Then, return the cake to the oven and leave until marshmallows are melty. This usually takes around 5 to 10 minutes.
9. Let cake cool and then frost with Mississippi Mud Cake icing.
Mississippi Mud Cake Frosting Recipe
Ingredients:
• 1 stick butter (softened)
• 1 box powdered sugar (1 pound)
• ½ cup baking cocoa
• ½ cup evaporated milk
• 1 tsp vanilla flavoring.
• ½ cup pecans chopped (or other favorite nut)
Directions:
1. Cream together softened butter and powdered sugar.
2. Add cocoa, milk and vanilla and mix until smooth.
3. Spread frosting on cooled cake.
4. Sprinkle nuts on top.
My Mother in law used to make this every Sunday for desert it was sooo good and it also freezes well so you can eat some now and wait and have some more later. A very rich and delish desert.[/font]
