Oatmeal Energy Bars Prep Time: 10 mins Cook Time: 20 mins Total Time: 30 mins Yield: 28 servings Ingredients:1/4 cup butter 2/3 cup sugar, brown (packed) 3 cup oats 1 cup raisins 1/2 cup cranberries, dried 1/2 cup apricots, dried 1 teaspoon cinnamon, ground 1/4 teaspoon nutmeg, ground 2 large egg whites 1/2 cups peanut butter, chunky 1/2 cups condensed milk, sweetened, fat-free cooking spray Preparation1. Preheat oven to 350°. 2. Cut butter into brown sugar with a pastry blender until crumbly. Stir in oats and next 5 ingredients. 3. Combine egg whites, peanut butter, and condensed milk in a small bowl; stir with a whisk until smooth. Add egg mixture to oats, and stir well. 4. Press mixture into a jelly-roll pan coated with cooking spray. Bake at 350° for 20 minutes; cool completely. Cut into 28 bars. (serving size: 1 bar).
