Boston Baked Beans (Chef Meg's Makeover) Submitted by: CHEF_MEG
6 1/2 hours to Prepare and Cook Serving size: 1/2 cup Number of Servings: 8
Chef Meg revamped this popular bean recipe to make it a slow-cooker dish. Soak your beans overnight, turn them low at lunchtime, and by 6 p.m. you'll have a tasty, fiber-rich side dish. Omit the bacon to make these vegetarian.
This is a great side dish for backyard barbecues!
If you are trying to reduce the sugar in your diet, substitute brown sugar Splenda. If you like your beans less sweet, use less sugar.
Ingredients:
1 pound dry white Northern beans 1 c onion, diced fine 2 slices bacon cut into small pieces 1/4 c brown sugar 1/4 c dark molasses 1 T brown mustard 2 T ketchup 1/2 t salt 1/2 t black pepper 3 c water
Directions:
Soak beans in water overnight. Drain and rinse. Place all ingredients into a slow cooker; set on low. Cook for 6 hours.
