Spicy Buffalo Bacon Burgers with Cool Ranch Dressing {Whole30, Keto}

These spicy buffalo burgers are easy to make, and packed with tons of flavor. Juicy spicy beef burgers are topped with smoky bacon and topped with a homemade cool ranch dressing. Keep it Whole30 and keto friendly by wrapping in lettuce or serving over a big salad.

Ingredients
ranch:
1 egg
2 Tbsp fresh lemon juice
2 tsp mustard
1/4 cup almond milk
1 clove garlic smashed
2 tsp onion powder
1 cup avocado oil or light flavored olive oil
1 tsp dried dill
1 Tbsp dried chives
Sea salt and black pepper to taste
burgers:
1 1/2 lbs ground beef
1/4 cup + 2 Tbsp hot sauce divided, Whole30 friendly
1 Tbsp ketchup Whole30 friendly
2 tsp mustard
Sea salt
6 slices bacon Sugar Free for Whole30
Lettuce tomato, sliced red onion for serving
Ranch for serving
Instructions
for the ranch:
In a tall narrow container (one that works with your immersion blender.)
Place the egg, lemon juice, mustard, almond milk, garlic, onion powder, and oil.
Put your immersion blender in the bottom of the container and turn to high speed, keeping it at the bottom for 30 seconds.
Slowly bring the blender up and then down again until the mixture is fully emulsified, thick and creamy.
Stir in dill and chives, then the salt and pepper to taste.
Refrigerate until ready to use.
for the burgers:
Heat a large skillet over medium high heat and cook the bacon until crisp, set aside.
Reserve 1-2 Tbsp bacon fat for cooking the burgers.
In a large bowl, combine the ground beef, ketchup, mustard, and just 2 Tbsp of the hot sauce.
Mix with your hands to combine.
You can pan fry or grill the burgers.
Heat your grill or skillet to medium high heat and brush with reserved bacon fat or oil.
Form the beef mixture into 6 patties, and, once sizzling hot, add to the skillet or grill.
Sprinkle sea salt over the uncooked tops of the burgers.
Cook 3-4 minutes, flip, and cook for another 3 minutes or so or until cooked to preference.
Remove from heat and immediately brush each burger with the remaining hot sauce.
Serve over lettuce and tomato topped with the bacon, ranch, and sliced red onion.
