I was eager to try this brand and develop an easy (yet healthy!) recipe that would be Whole 30 compliant. The cashews made this salad pop, and the skipjack was flavorful. The vinaigrette was the perfect light dressing to top this salad. I recommend using an oil based dressing in your own recipe! It was the perfect light lunch that we were looking for.Serves: 2Ingredients: Ocean Natural Skipjack tuna or your favorite tuna in water Primal Kitchen Paleo Approved Avocado Oil Mayo Romaine lettuce Tomatoes Cashews Hard-boiled eggs Homemade vinaigrette or vinaigrette of your choice
Instructions: Mix tuna with a tablespoon or two of the mayo. Prepare salad by filling a bowl with 2 cups of romaine lettuce. Put 1/2 of prepared tuna on the lettuce. Top with tomatoes, cashews, hard-boiled eggs, and a tbsp of vinaigrette.
