JALAPENO CHEDDAR SKILLET MEATLOAF

Making dinner really shouldn’t be stressful, but all too often it is. On busy weekdays, just the thought of having to get a wholesome low carb dinner on the table can send you into a panic. Blood pressure rising, heart pounding, you’re rushing to get home and find something you can throw in the oven as quickly as possible. You’ve got hungry mouths to feed and you don’t want to succumb to high carb take-out. What you really want is easy, effortless and infinitely flavorful. This is the recipe for you. And, you don't have to be doing low carb/keto to enjoy it.
Prep time: 10 min
Cook time: 30 min
Total time: 40 min
Makes: 8 servings
Ingredients
2 lb ground meat I like a mix of beef and pork but you can do all beef
1/2 cup almond flour or regular flour if you are not on low carb
2 jalapeños minced
2 garlic cloves minced
1 tsp cumin
1 tsp salt
1/2 tsp pepper
1 1/2 cups shredded cheddar cheese divided
Instructions
Preheat the oven to 375F.
In a large bowl, combine the ground meat, almond flour, jalapeños, garlic, cumin, salt, pepper, and 3/4 cup of the shredded cheese.
Use your hands to mix well together.
Spread the mixture evenly in a 10-inch oven-proof skillet (cast iron is best).
Sprinkle the top with the remaining shredded cheese.
Bake 25 to 30 minutes, until the loaf is firm and the center reaches 160F on an instant-read thermometer.
Remove and let cool a few minutes before slicing.
Serving with toppings like sour cream, chopped cilantro, and guacamole.
