Fabulous Fajita Chili (Crock-pot or Stove-top)5 SP

Fajitas and chili meet in this delicious, healthy chili. Fajita-style since loaded with sweet bell peppers and onions. And it’s so versatile. Serve it in a bowl, stuff a baked potato or top a salad. It’s sure to become your new favorite chili!
Prep Time: 15 minutes
Cook Time: 8 hours on low heat or 5 hours on high heat
Makes 8 cups total (each serving,1 cup)
Ingredients for Chili:
2 cups red bell peppers or 1 cup each red and yellow, chopped
1½ cups onion, chopped
1 pound extra lean ground beef or 99% fat-free ground turkey breast
1 (28 oz) can diced tomatoes or 2 (14.5-oz) cans diced tomatoes
1 (15-oz) can black beans, rinsed and drained
1 (15-oz) can chili beans or white beans, rinsed and drained
1 (8-oz) can tomato sauce or 1 cup pasta sauce from a jar
1 (1-ounce) packet Lawry’s chicken fajita seasonings or use your favorite
2 teaspoons cumin
2 teaspoons chili powder
Ingredients for Toppings, Optional:
Tomatoes, chopped
Lettuce, chopped
Reduced-fat cheddar cheese or lite Mexican blend, shredded
Onions, chopped
Instructions
1. For Crock-pot:
Add onions and peppers to a microwave safe bowl.
Cook in microwave for 3 minutes, to soften a bit.
Brown ground beef in a large nonstick pan.
Pour into colander to drain any fat.
Add browned meat to crock-pot.
Mix in softened bell peppers and onions, tomatoes, beans, tomato sauce, fajita seasonings, cumin and chili powder.
Cover and cook on low heat for 7-8 hours or high heat for 4-5 hours.
Time varies depending on your crock-pot.
2. For Stove-Top:
Add onions and peppers to a microwave safe bowl.
Cook in microwave for 3 minutes, to soften a bit.
Brown ground beef in a large nonstick pan.
Pour into colander to drain any fat.
Add browned meat back to pan Mix in softened bell peppers and onions, tomatoes, beans, tomato sauce, fajita seasonings, cumin and chili powder.
Bring to a boil; reduce heat and simmer, uncovered for 25 minutes.
3. This chili freezes great.
Serve with optional toppings on the side and let everyone customize their own bowl, if desired.
