HEALTHY FUDGE BITES

Ok, so y’all know how I’ve been trying to eat healthy and heal my body, right? One of the hardest things for me has been staying away from sweets. But it’s so necessary for the healing of the gut! Well, I happened to hit a landmark this week so of course, I wanted to celebrate with a healthy chocolate snack. Sometimes you just need to put the kids to bed and sink your teeth into some delicious fudge. Even though you’re supposed to be dieting. Shhhhh, just taste it. Delicious, right? It’s the easiest recipe, you just need 5 ingredients, and 10 minutes!
You will be SO glad you made these! Trust me.
Ingredients:
1 cup natural peanut butter or other nut butter for Paleo
¾ cup honey or organic pure maple syrup
½ cup coconut oil
2 teaspoons vanilla
6 tablespoons cacao powder (I get mine at Vitacost.com)
Instructions:
Melt the nut butter and coconut oil on the stove, and then add the honey.
Don’t heat the honey too much or it’ll kill all it’s goodness!
Once it’s all mixed up, remove from the heat and add the vanilla and cacao, and thoroughly mix.
Then pour into cupcake liners.
You can skip the liners, but I knew I wouldn’t want to mess with digging them out once they were done, so I opted for liners.
Put them in the freezer for 20 or so minutes, and then test them to see if they’re hard enough.
They should be solid.
They can be kept in the freezer or the refrigerator, but I prefer the freezer.
They’re nice and fudgy, full of good stuff, and really satisfy a sweet craving without going overboard on them.
One is the perfect snack for me (occasionally), but thankfully, I don’t crave them every day because they’re not full of the toxic sugars that just make you want more!
