CHOCOLATE FUDGE MERINGUE COOKIES (GLUTEN FREE)

Fresh baked cookies are a traditional part of Christmas, and my list of favorites always include these chocolate fudge meringue cookies. I knew this Holiday Food Gift Recipe was the perfect place to include this delicious cookie, even though I make these year-around.
You’re going to love these simple cloud-like cookies, hopefully as much as our family does. With a soft crunch on the outside with a soft fudge center when you bite into them, oh my. They are heavenly!
Ingredients
1 -1/2 cups chocolate chips (for dairy free choc- I use Enjoy Life Choc Chips)
4 egg whites
3/4 cup sugar (I use raw)
1 tsp vanilla
1 cup chopped walnuts (optional)
Directions
Preheat oven to 350 degrees.
Melt the 1 1/2 cups of chocolate chips in a double boiler – set side to cool to room temperature.
While chocolate cools, beat egg whites in electric mixer, gradually adding the sugar in as it whips.
Continue beating on high until egg white mixture forms peaks.
Gently fold in vanilla, melted chocolate, and nuts until just incorporated.
Don’t over mix.
Drop by cookie scoop or spoonfuls onto a parchment lined cookie sheet.
These won’t spread much.
Bake for 12 minutes.
Transfer cookies to a rack to cool.
Store cookies in an airtight container.
They keep for several days.
These aren’t cookies that will freeze or keep a long time, so make them and enjoy fresh-baked.
Double Chocolate Version
You can add an additional 1/4 cup mini or regular chocolate chips, or white chocolate chips to the batter before baking.
Mint Chocolate Version
Add a 1/4 tsp of mint extract to the batter for a chocolate mint flavor.
