Dr. Dick's Lean and Mean Kidney Bean Hash
Ingredients:
2 Tablespoons olive oil
1 medium onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
2 to 3 boiled potatoes, chilled and diced with skins still on
1 15-ounce can kidney beans
1/2 cup water
dash of salt
dash of pepper
dash of garlic powder
dash of Tabasco sauce
dash of Mrs. Dash seasoning
Instructions:
Heat the olive oil in a large frying pan. Saute the onion until it's soft.
Add the green and red peppers and saute briefly.
Add the diced potatoes and mix well.
Cook for 10 minutes, turning with a spatula every 2 minutes.
While the potato mixture cooks, rinse the beans well to remove the "goo," then mash 1/2 to 2/3 of the beans with a potato masher.
Mix the beans into the mixture in the frying pan, add 1/2 cup water, and cover.
Cook over medium heat for another 5 minutes.
Season to taste. Serve and enjoy.
This serves two or maybe just one very hungry person.
(The first time Dick made it, his wife ate it all because she was VERY hungry and it was, as she said, "soooo good.")
Alternative Suggestion
For turkey hash, substitute diced turkey for the kidney beans.
Or leave in the beans and just add turkey.
Either way, it's a great way to use up left-over turkey.

When Diana Dyer asked if she could use one of our Bean Bible recipes on her website, I went to check out her site, www.cancerRD.com. In addition to a lot of incredibly useful information for cancer survivors, I found the recipe above, which looked like something our readers would enjoy. So we swapped permissions and links.
Diana describes herself and her site thus, "Inspirational site created by a dietitian who is a 3-time cancer survivor, including neuroblastoma and breast cancer twice. You will find nutrition information and healthful low-fat, light recipes of benefit to all cancer patients." It's a high-quality site full of useful information. You'll like it, even if you've never had to deal with cancer.
