Tomato-Curry Lentil Stew
Serves 6 Ingredients: 1-1/2 cups dry lentils 6 cups chicken stock 15 ounces canned or fresh tomatoes (I'm thinking maybe use sun-dried tomatoes in herbed oil and skip the extra garlic) 1/4 cup chopped onion 2 potatoes peeled and cubed 2 carrots peeled and sliced 1/2 butternut squash, peeled and cubed 1 teaspoon curry powder 6 cloves garlic, minced salt to taste ground black pepper to taste
Instructions:
1.Combine lentils and chicken stock, bring to a boil. 2.Lower heat to simmer, add tomatoes, onion, potatoes and squash. 3.Cover and let simmer 45 minutes. 4.Check every 15 minutes to stir, and add more stock if necessary. 5.Add spices and carrot in the last 15 minutes to taste. 6. Taste and re-spice if necessary before serving.
***Wanted a good lentil recipe. Went to allrecipes.com and found one I could use. Then with others suggestions and my own preferences, I came up with this recipe. It comes out to about 250 cals a serving.
