Grilled Lemon Herb Chicken Thighs (Marinating required) From: Kristen @ www.slenderkitchen.com/This delicious recipe pairs juicy dark meat chicken with lemon, yogurt, and herbs and the results are delicious. It really is the perfect summer chicken in my opinion and pairs great with some grilled veggies. I recommend making enough for leftovers because it is perfect paired with veggies and greens, turned into a quick chicken salad (yum!), chopped up into tacos, or really served up any which way.Servings: 5Serving Size: 2 chicken thighs Ingredients 10 chicken thighs, trimmed of fat with skin removed (1.67 lbs.) 1/2 cup plain nonfat yogurt 1 tbsp. olive oil 4 lemons 3 garlic cloves, chopped 2 tbsp. fresh rosemary (or 1 tsp. dried) 2 tbsp. fresh sage (or 1 tsp. dried) Salt and pepper
Instructions Season the chicken with salt and pepper. Zest and juice the lemons. Stir together the yogurt, olive oil, lemon juice, lemon zest, garlic, rosemary, and sage. Marinate the chicken overnight in the fridge or for at least 1 hour covered on the counter. When ready to cook, preheat the grill to medium high. Remove the chicken from the marinade, shaking off any excess. Grill for 7-8 minutes per side or until cooked through completely.
