Royal Icing From: food52.com/Makes about 3 cups Ingredients: One 1-pound box confectioners sugar 3 tablespoons meringue powder 1/4 to 1/2 cup water Optional: 1/2 teaspoon vanilla, almond, or lemon extract
Instructions: In the bowl of an electric mixer (or with a hand mixer), beat the confectioners sugar and meringue powder until combined. Add the water and beat on medium speed until it becomes very glossy and stiff peaks form, about 5 to 7 minutes. If necessary, spritz more water on the icing until you achieve the consistency you want.
To cover or "flood" the entire surface of a cookie with icing, here's a good test: When you lift the beater, the ribbon of icing that falls back into the bowl should remain on the surface of the icing for a few seconds before disappearing.
Use immediately, or cover with a wet towel. If you are not going to use it right away, transfer to an airtight container; royal icing hardens when exposed to air.©2013 Food52
