Prep time: 5 min Cook time: 25 min Total time: 30 min Serves: 8 INGREDIENTS 6-8 Pork Chops (either bone-in or boneless, your choice)Salt & Pepper1 tsp. of Xanthan Gum (or Glucomannan)3 T Olive Oil16 oz Sliced Mushrooms1 Medium Yellow Onion, sliced1.5 cups Beef Broth (this kind is my favorite)
INSTRUCTIONSHeat a large skillet over medium-heat with 1 T of olive oil. Season each side of the pork chops with salt and pepper, then sear for 2-3 minutes on each side, until nicely golden browned. You may have to do this in batches.Set the pork chops aside, an add 2 T of Olive Oil to the pan. Saute the mushrooms and onions in the pan about 5 minutes.Sprinkle the mushrooms and onions with the Xanthan Gum and a bit of salt and pepper to taste. Stir to combine.Pour in the beef broth and simmer on low heat until the gravy starts to thicken.Set the cooked pork chops in the mushroom and onion gravy and simmer for 3-5 more minutes, until the internal temperature of the pork chops reaches 165 degrees (F). Serve warm and enjoy!
