I love these Air Fryer blackberry hand pies because they are so simple to make and they’re absolutely delicious! A quick dessert without all the fat!
INGREDIENTS:
1 package refrigerated pie dough
1 egg beaten
For Filling:
12 oz fresh blackberries
¼ cup sugar
3 tbsp all-purpose flour
2 tbsp lemon juice
½ tsp cinnamon
For Icing:
1 cup Powder sugar
½ lemon
Directions:
Preheat the Air fryer by wiping clean and pre heat if needed on your machine.
For Filling:
Rinse the blackberries and lay them on a plate covered with a paper towel.
Set to the side for 1 hour to allow berries to dry.
Cut them in half, and place them in a medium bowl.
Add in the sugar, lemon juice, cinnamon, and flour, and toss to combine.
Pour your blackberry mix into a medium saucepan cook on medium.
Mash the berries with a potato masher until lightly chunky.
Turn off the heat and set to the side.
Pie Directions:
Using your counter top or cutting board spread flour on top to coat.
Lay the pie crusts and gently roll them out to ¼" thickness.
Use a LARGE circle cookie cutter cut out 6 circles.
Place the circles of dough on a baking sheet.
Place 1 tbsp of filling in the center of the pie dough.
Brush the edges of the pie dough with beaten egg.
Fold the dough over, and press the dough down with your fingertips to seal closed.
Using a fork press around the edges to leave indentations on the edges.
Brush the top of the pies with beaten egg.
Sprinkle the top with sugar lightly.
Place two at a time in the Air Fryer and cook on 380' for 8-10 minutes or until golden brown and flaky.
Icing Directions:
Add icing ingredients in a small bowl.
Mix with a whisk until well combined.
Let cool slightly and top with icing drizzle.
Enjoy!
