Baked Eggs in Muffin Tins (2 SmartPts) From: Lisa @ snack-girl.com/snack/Baked-Eggs-in-a-Muffin-Tin/Great to make homemade breakfast sandwiches. Makes 12 eggs Need:
12 large eggs non-stick spray (I use olive oil or avocado oil spray, but your favorite spray will be fine.)
How to:
Heat oven to 350 F. Spray a 12 well muffin tin liberally with non-stick spray. Crack one egg in each well and add salt and pepper (if desired). Bake for 17 minutes or until egg yolk is set. Serve immediately or store for a later meal.Nutritional Information:For one egg = 74 calories, 5.0 g fat, 1.5 g saturated fat, 0 g carbohydrates, 0 g sugar, 6.3 g protein,0 g fiber, 70 mg sodium, Cooks Note:I also poach eggs for Eggs Benedict, same method except add 2 Tbsp water first, put in the egg, season if desired and bake at 400 degrees for 8 mins. So great when doing for a group.
