La Festa di San Valentino (Valentine's Day) is nearly here, and the rush is on for chocolate and roses to shower those we love. Try my Valentine's Chili recipe with chocolate. I think you and your "honey" will love it!!INGREDIENTS 6 cups tomato sauce 4 cups diced cherry tomatoes 1 teaspoon or more salt Grinding black pepper 2 teaspoons dried oregano 1 large Vidalia onion, finely chopped 1/2 pound pancetta diced 2 tablespoons olive oil 2 pounds Italian sweet pork sausage with fennel, casing removed 2 pounds ground chuck 3 cups sweet barbeque sauce 4 tablespoons chili powder 1 tablespoon paprika 1 teaspoon cumin 2 cans chickpeas, drained and rinsed Two 1 ounce squares unsweetened chocolate, chopped
DIRECTIONS In a large, heavy-duty pot, combine the sauce, diced tomatoes, salt, pepper, and oregano In a large saute' pan, heat the olive oil, and add the onion and pancetta. Cook until pancetta begins to brown. Add the pork and chuck and brown. Transfer the mixture to the pot with the tomato sauce. Add the barbeque sauce, chili powder, paprika, and cumin. Combine well. Cook over medium heat for 5 minutes. Stir in the chickpeas and the chocolate. Lower the heat and simmer for 20 minutes. Correct seasonings, adding more salt of pepper if needed.
