Sugar Free Five Minute Microwave Fudge

Rich chocolatey fudge that is microwave fast in one delicious, sugar free package!
Prep time: 5 min
Serves: 6
Ingredients
1 cup Lily's chocolate chips
5 tablespoons heavy whipping cream
4 tablespoons unsweetened almond milk
1/4 cup Gentle Sweet or 1/2 cup powdered xylitol
1/2 teaspoon vanilla
1/4 teaspoon walnut flavoring (optional but so good)
1/2 cup chopped walnuts, divided 1/3 cup in the fudge and rest scattered on top
Instructions
Prepare a pan.
I used a 3x7 silicon bread pan and sprayed it very lightly with oil for the fudge in the main pictures.
I've also used a small 5x8 glass pan lined with plastic wrap and that works well too.
Place the chocolate chips, cream and milk together in a bowl (I used a 4 cup glass measuring cup) and microwave for 1 minute and check to see if the chips are melted just enough to whisk together easily.
(Mine is ready in 1 minute but oven times may vary).
If not put back in for another 15-30 seconds...don't overcook.
Whisk these together and add in the powdered sweetener and flavorings.
Stir in the nuts, pour into the prepared pan sprinkle remaining nuts on top if desired and chill well.
I cut my 3x7 inch bar into 12 pieces and really two of those small pieces are so filling and satisfying... really one of all I needed.
Notes
I have never timed the chill time, I always leave it a few hours, but that might not even be necessary. It should be sliceable though and hold together very well as shown in the pictures and remain totally stable at room temperature once it's chilled.
Avoid using the high stevia sweeteners in this recipe as stevia and chocolate can get bitter very easily. When I tried using my standard pinch of salt in the chocolate mix is seized up so I would not suggest that you do that.
