HAM & CHEESE QUINOA BITESFrom: Becky @ www.soveryblessed.com/I’m so glad I made this one! Seriously, this is a good one. I made a second batch immediately after trying my first bite of these. The juicy bits of ham and creamy melted cheese take the flavors of a pumped up grilled ham and cheese sandwich, in a handy dandy, healthier bite-size! These freeze well and keep up to about a week in the refrigerator. Ingredients 2 cups cooked quinoa (I cook mine in chicken broth)2 eggs1 tsp minced garlic1/2 cup diced onion1 cup finely diced ham1 1/2 cups shredded sharp cheddar cheese3 Tbs fresh chives, chopped1/2 cup Panko Bread Crumbs1/4 tsp each of salt and pepperHoney Mustard for dipping. (We use Kraft)InstructionsPreheat oven to 350 degrees.Mix together all ingredients.Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each) and press down gently to compact.Bake for 15-20 minutes.
