BACON BLENDER HOLLANDAISE SAUCE

Save your bacon grease!!! If you haven’t tried baking your bacon on a cookie sheet in the oven then you need to convert now! You get perfect crisp bacon and best of all you can save all that yummy bacon grease. If your not going to use it right away, you can store it in the refrigerator in a glass jar. I like to add it to recipes or plain scrambled eggs to give them more flavor.
A lot of people don’t realize how easy and quick this sauce is to whip up! It dresses up Eggs Benedict, asparagus, even seafood such as salmon. Hollandaise Sauce is a rich creamy and buttery sauce made from an egg yolk and butter emulsion. For this recipe we will be using some bacon grease to give the sauce a subtle bacon flavor. Hollandaise Sauce goes as far back to the 1500’s, also one of the five “Mother Sauces” in French classical cooking.
I also used a touch of Sriracha Hot sauce to enhance the flavor. Hollandaise sauce is really only good served fresh, so have your food ready and waiting to be drizzled with this delicious sauce!
Prep Time: 5 minutes
Cook Time: 1 minute
Total Time: 6 minutes
Yield: 1 1/2 cup
Serving Size: 1/4 cup
Ingredients
6 Tbl salted butter (melted)
1 1/2 Tbl bacon grease (melted)
4 egg yolks
1/2 tsp Dijon mustard
1 Ttbl fresh lemon juice
1/4 tsp Sriracha sauce or to taste (Optional)
Instructions
To your blender add, egg yolks, Dijon mustard, lemon juice, sriracha sauce.
Blend on low for about 10 seconds.
Scrape down sides.
Turn blender back on low and slowly drizzle in melted butter and melted bacon grease.
Serve immediately on eggs, salmon, asparagus or any other dish that needs extra flavor.
