BAKED PARMESAN POTATO WEDGES

Ultra simple Baked Parmesan Potato Wedges with some garlic kick. It’s the perfect side dish for almost any everyday meal.
We all need and want easy side dishes that are reasonably healthy. While I won’t claim this as health food, there are a lot worse choices. I’m trying to keep bags of evilness out the house (c-h-i-p-s).
I wanted something using what I always have on hand but tasty… it had to be tasty.
So preheat the oven to a reasonable temperature. Clean and slice a potato. Rinse to remove starches that will improve crispness. A little 7:2:2 (you must have this) and a good dusting of Parmesan cheese and you have crunchy tasty goodness.
Prep Time: 10 min
Cook Time: 30 min
Total Time: 40 min
Serves: 2
INGREDIENTS
1 medium russet potato
1 teaspoon olive oil
½ teaspoon 7:2:2 seasoning
2 tablespoon fresh grated Parmesan cheese
INSTRUCTIONS
Preheat oven to 350 degrees convection or 375 conventional oven.
Wash 1 medium Russet potato and scrub well.
Cut into 6 equal wedges, give them a nice rinse under running water and pat dry with paper towel.
Brush with olive oil and give them a sprinkle of salt, pepper and garlic powder.
I use my famous 7:2:2 seasoning.
Dip into grated Parmesan cheese.
Fresh grated preferred.
2 tablespoons are enough for 1 potato
Place potato wedges on a baking tray sprayed with PAM with skin side of the wedge down.
Bake until golden brown. About 25-30 minutes.
Internal temperature should be 200 degrees or a little more.
Notes: I did two potatoes for two people. What I would consider normal size bakers. 3 slices (1/2 of a potato) was just the right size for a serving.
HOMEMADE EVERYDAY SEASONING SALT – 7:2:2 MIX
A great choice on almost everything. A mixture of common spices ideal to add to meats or vegetables. Ready to use without measuring every time. Modification for the Garlic-asaurus- I live with a garlic loving wife along with the rest of my family when they are here.
Serves: ⅓ cup
INGREDIENTS
7 Tablespoons Kosher salt
2 Tablespoons Black pepper
2 Tablespoon Granular garlic (1 for 7:2:1)
INSTRUCTIONS
Mix well
NOTES
This is written with Tablespoons but you could use teaspoons, cups or any other measurement. It is all about the ratio of ingredients.
