Prep/Total Time: 30 min.
MAKES: 4 servings
Ingredients 4 boneless skinless chicken breast halves (6 ounces each) 1/2 teaspoon salt 1/2 teaspoon coarsely ground pepper 1 tablespoon olive oil 5 garlic cloves, minced 1/2 cup heavy whipping cream 1/3 cup white wine (If you don't cook with wine, you can use chicken broth.) 1/4 cup chopped oil-packed sun-dried tomatoes 2 tablespoons capers, drained Hot cooked pasta
Directions Flatten chicken slightly; sprinkle with salt and pepper. In a large skillet over medium heat, cook chicken in oil for 5-7 minutes on each side or until juices run clear. Add garlic; cook 1 minute longer. Stir in the cream, wine, tomatoes and capers; cook until sauce is slightly thickened. Serve with pasta.
*Enjoy this recipe with a full-bodied white wine such as Chardonnay or Viognier.

Wow oh wow....was this good. My hubby said this is definitely a "repeater". I loved this and of course, I tailored it to our taste. First, of course, there was no pasta. It really didn't need it. But, if you want the pasta I suggest that you double the sauce. It is outrageously good!! Also, I used avocado oil instead of olive oil...just our taste. And, no wine...did the chicken broth. It was wonderful...the whole recipe is wonderful. Oh, and I did just about one clove of garlic. My hubby has a tendency to hang on to garlic and keep it for days. So does one of our sons. Other than that...I followed the recipe. I think next time I will do 6 chicken breasts and double the sauce. And, there will be a next time. We give this recipe...
