Loupy's Favorite Egg Bake
An easy and tasty brunch or dinner egg bake with easy to use ingredients. I love the taste of spinach and sun-dried tomatoes together. It's like a party in my mouth. You can use any meat, veggie or cheese in this recipe and it will turn out great. Try ham with onion and Italian cheese. Or try chorizo with cilantro and Caso Blanco cheese. The sky is the limit.
Ingredients: 12 eggs 1/2 cup 2% milk 2 tbs half and half 16 oz breakfast sausage 1/2 cup sun-dried tomatoes in oil, chopped not drained 10 oz can of spinach, drained or frozen thawed and squeezed dry 2 cups of shredded cheddar cheese or cheese of your choice Salt and pepper
Instructions: HEAT oven to 350°F. Grease a 9x13 baking pan with butter or non-stick spray Fry sausage in iron skillet Crack eggs and beat in medium bowl with a fork until blended. Add in milk, half and half, salt and pepper and blend. Stir in spinach and sun-dried tomatoes. Gently add in sausage and stir. Add in cheese a little of a time stirring so it doesn't clump. Carefully pour into baking pan. BAKE in 350°F oven until puffed and golden (Not browned) and knife inserted near center comes out clean, About 40 to 50 minutes.
