Loupy's Family Taco Beans
We love these beans as a side dish for our tacos or as an appetizer dip with tortilla chips on the side.
Total Time: 15 Minutes
Makes about 6 generous servings
INGREDIENTS 1 16-ounce can refried beans 1 15-ounce can pinto beans, drained and rinsed 1/2 cup chopped tomatoes 1 cup grated sharp cheddar cheese, divided 1/4 to 1/2 tsp chipotle powder, if desired DIRECTIONS Preheat oven to 350 degrees Combine refried beans, pinto beans and 1/2 cup cheese in a medium saucepan. Cook over medium heat, stirring, until the mixture is hot and the cheese is melted. Takes about 5 minutes. Stir in the chiptole powder, if using. Spoon the bean mixture into a 2-quart baking dish and sprinkle with the remaining 1/2 cup cheese . Bake about 10 minutes until cheese is melted and gooey. Take out of oven and let sit for a few minutes. Sprinkle chopped tomatoes on top. Serve warm.
