Caprese & Cannellini Bean Salad Makes 1 serving Instructions:
½ cup arugula 3 slices heirloom tomatoes 2 ounces sliced, fresh mozzarella cheese 4-5 fresh basil leaves ½ cup cannellini beans 1 tablespoon olive oil Salt Pepper
Instructions:
Arrange arugula on a salad plate and layer tomato slices, mozzarella and basil on top. Sprinkle Cannellini beans over the salad, drizzle with olive oil and season with salt and pepper. Serve.
